- Fill a large bowl with ice and cold water, then set it aside. In a separate pot, bring 6 cups of water to a rolling boil over high heat. Add the lemon juice, salt, bay leaves, and black peppercorns to the boiling water and let it simmer for 1 minute to infuse the flavors. Remove the pot from heat, then immediately add the peeled and deveined shrimp, cover with a lid, and let them sit undisturbed for exactly 4 minutes—this gentle poaching method keeps shrimp tender and prevents them from becoming rubbery. Using a slotted spoon, transfer the cooked shrimp to your prepared ice bath and let them chill for 5 minutes to stop the cooking process and set their texture.
- While the shrimp cooks, chop the romaine lettuce into 1-inch pieces and divide it evenly among your serving plates as the base. Slice the avocado into 1/2-inch thick wedges and arrange them on the lettuce. If you haven't already, quarter the hard-boiled eggs and distribute them around the plate. Halve the cherry tomatoes and add them to each plate. I like to arrange the salad components in neat sections so each bite has a variety of textures and flavors—it's more visually appealing and makes the salad feel composed rather than tossed together.
- Remove the chilled shrimp from the ice bath and pat them dry with paper towels—this prevents excess water from diluting your dressing. Arrange the cooled shrimp from Step 1 on top of each salad, grouping them attractively in the center or around the other components. Drizzle the Thousand Island dressing over each salad, then sprinkle the finely chopped chives and smoked paprika across the top for both flavor and visual appeal. Finish with a light drizzle of extra virgin olive oil and a squeeze of fresh lemon juice from the half lemon.
